Sunday Dinner

Today after church I came home and prepared oven braised brisket for our dinner tonight.    Recently we purchased a half of a half of a cow, so far we have been very pleased.   

Oven Braised Brisket:

1 (4lb) beef brisket

1 tablespoon salt

3/4 TSP black pepper

1 large onion, halved lengthwise and thinly sliced lengthwise

1 cup beef stock.

1 cup tomato sauce

1/3 cup cider vinegar

1/3 cup light brown sugar

1 tablespoon Worcestershire sauce

Special equipment: parchment paper

Put a rack in middle of oven and preheat oven to 325 degrees F

Pat brisket dry and rub salt and pepper all over it.  Heat oil in a 12 inch heavy skillet over moderately high heat until hot but not smoking.  Add brisket and cook, turning once, until browned on both sides, about 10 minutes. Transfer to a 13 by 9 inch baking dish.

Add onion to skillet and cook over moderate heat, stirring frequently , until browned, 7 to 8 minutes.  Add stock and deglaze skillet by boiling, scraping up brown bits, for 1 minute.  Stir in remaining ingredients and bring to a simmer, stirring occasionally.

Pour sauce over brisket.  Cover meat with a sheet of parchment and cover pan tightly with foil.  Braise in oven, turning meat once, until fork tender, 3 to 3 1/2 hours.

Transfer brisket to a cutting board and slice across the grain. Skim off and discard fat from surface of sauce.  Serve sauce spoon over meat.

I also made coleslaw and some crescent rolls from a package I’m not that adventurous.    What did you and your family have for dinner tonight?
